Aroma: Mild to moderate with vivid impressions of summer melon (especially honeydew) and ripe strawberry bouquet. Hüll Melon’s unique but mellow fruit character makes it a good choice for styles where overpowering hop flavor may not be warranted. It melds well with the yeast character of Hefeweizen and Belgian ales, but can also work as as standalone hop as a feature of a summer seasonal or Brett fermentation.

Mosaic combines a very complex hop aroma with fairly high alpha-acids and low cohumulone which makes it a perfect triple purpose hop (Bittering/Flavor/Aroma). First selected by a notable Belgian brewery lead to this variety being called Belgian Saaz and later shortened to “B” Saaz so as not confuse country of origin.

First impressions are a very lively and lifted lemon and lime followed by a background of tropical fruit. This variety displays similarities to its Saazer parent through its levels of Farnesene typically around the 12 % mark however the higher alpha also makes this hop more desirable in dual purpose applications. It imparts a balanced bitterness as well as a desirable new world “noble” type aroma.

Freshly squeezed limes with top notes of mixed citrus are the standouts in a heady blend of essential oils.

Citrus characters apparent in selection step back a little in the finished product to make way for a blend of stone fruits such as fresh peaches and ripe apricot. Low cohumulone and high levels of farnesene create a rounded clean bitterness when used in single hopped beers. The high oil content fills in all the corners when used in late additions, the hop back or in dry hopping.

Used in both Lagers and Ales where its character builds to develop an excellent finishing bitterness and drinkability. Fresh peaches and stone fruit dominate the aroma in singled hopped beers and also when combining as a late addition with other varieties. Creates fruity aroma driven new world beer styles.
